Hefe-Rye-Zen

I have been thinking on this recipe for a while and I think I am finally ready to brew it. I need to fix my mash tun and get a new thermometer, but I can do that at anytime and hopefully brew this before the end of the year. I thought I was being smart mixing Rye and Wheat together, but it seems that it has been done before. I am hoping that the Rauch malt added will give it a unique taste. I want the weiss characteristics, but with some spiciness from the Rye and a hint of smoke from the Rauch. Here is the recipe.

Hefe-Rye-Zen

Malts:
8 lbs: German Wheat
1.5 lbs: Rye Malt
1.5 lbs: German 2-Row Pils
.75 lbs: German Rauch Malt
.50 lbs: Rice Hulls

Hops:
1.5 oz: Spalt Spalter 4.5AA 60 minutes

Yeast:
Wyeast Weihenstephan Weizen (3068)

Target OG: 1.067
Target FG: 1.017

Update 2.3.2009: This beer is up in the air. I have no idea wtf is wrong with me and my efficiency. Anyway the beer is only down to 1.022 and it needs to keep going. I moved to secondary and I will let it sit for a while to see if it will move anymore. I did taste it and it smelled just like I wanted, clove, bannana with a hint of smoke. Taste is of a a bit thin hefe with a hint of spiciness which I guess is from the rye.

Update 2.16.2009: Bottled tonight, so we will see in a few weeks what happens with this.

Update 3.19.2009: After having a few bottles and opening up one last night, I have to say this gets better with some age. The beer is an experiment alright and one that I might do more of in the future. Ill try writing up a review soon and post a few pictures. I think next time i will use less rauch malt and maybe more rye.
